2 racks of lamb
1 head of garlic (cloves peeled)
1/4 cup of rosemary leaves
1/4 cup of extra-virgin olive oil
salt and pepper
In a food processor, combine together garlic, rosemary, and olive oil until the garlic is finely chopped. Season with salt and pepper, then rub with the garlic mixture. On a baking sheet lay the rack of lamb fat side up for about an hour.
Preheat the oven to 450 degrees. Roast the lamb in the upper third of the oven for 15 mins. Turn the rack and roast for 10 additional mins or when the internal temperature reached 128-130 degrees for medium-rare. Take out of the oven and allow to rest for 10 mins.
